Taking its name from the pure limestone soils of Valentina’s Passalacqua’s hometown of Arpicena, the Calcarius project has quickly set about redrawing the boundaries of Puglian wine. The kaleidoscopic assortment of wines she produces have become firm fixtures on our table to enjoy on the long days of summer.
