Cyril Fhal is one of the Roussillon’s, and perhaps France’s, great unheralded winemakers. A few years ago he decided to branch out from usual his monk-like focus on producing wines from his immaculately tended old vines high in the foothills of the Pyrenees and buy fruit from some trusted friends to create a range of more wines intended to be drunk more immediately, that sit happily at the centre of the dining table. Hors Champs is the name he has given to these notionally experimental, unquestionably delicious wines that retain the hallmarks of Cyril’s fastidious approach in the cellar.
