This might have been just his second vintage, but it is already clear that Sebastien Chatillon's 'Levat' is his piece de resistance and when you see the vineyard it comes from it is easy to see why. The majority of the fruit here comes from ninety year old bush vines of Cinsault and Grenache, though there is a little Picpoul, Clairette and Grenache Blanc in the mix. The old vines have lent an unbelievable amount of structure to this wine, rendering a rose that is complex, powerful and deep. Watch a magnum unfurl over the hours, or put this down for a few years.
