This is from the 3rd passage from the Cinsault parcel and typically the deepest of the wines seeing 20 days in whole bunch maceration. Still coming in under 13% this is still incredibly fresh and vibrant, with a little more structure than previous years. Only a few cases made their way to our shores.
Axel Prüfer
Axel Prüfer’s lightness of touch means that, on tasting, it is almost impossible to believe that wines of such energy and freshness come from the often drought-afflicted hills of his adopted home in the Languedoc. Axel works primarily with cinsault planted amongst dense forest and over a dazzling array of quartz and granite soils, and his bottles feel like they have years ahead of them.
