The Chardonnay grapes hail from old vines organically grown on ancient rocky clay-limestone soils which, in these Northern terroir, shape Chardonnay into a particularly elegant heavenly creature. A zen-like streamlined simplicity is intertwined with an almost infinite depth: toasted bitter almonds with cloves honey, sage and buttered pears and wild tarragon and lavender. This is one of those bottles that will just disappear !

Alice et Olivier de Moor
Alice and Olivier de Moor live and work in Courgis, a small village 7km southwest of Chablis. The De Moors have worked their vines organically since 2005, a rarity in this area and no SO2 is used either at harvest nor during the vinification process. Ageing has traditionally taken place in Burgundian barrels of different ages for the Chablis wines, the Bourgogne Chitry and the old vine Aligoté, with the younger vine wines and Sauvignon aged in cement and stainless steel tanks.
