Alice and Olivier De Moor are winemakers with a cult status in France, growing natural Chardonnay and Aligoté in Chablis that has attained something of a mythical status. Mont de Milieu is a 0.8 hectare premier cru vineyard made up of very old vines planted in the 1930s and some relatively newer ones planted in the 1980s. Fermented and aged for over a year in barrel, this is rich, spicy and electrifying premier cru Chablis at its absolute best.

Alice et Olivier de Moor
Alice and Olivier de Moor live and work in Courgis, a small village 7km southwest of Chablis. The De Moors have worked their vines organically since 2005, a rarity in this area and no SO2 is used either at harvest nor during the vinification process. Ageing has traditionally taken place in Burgundian barrels of different ages for the Chablis wines, the Bourgogne Chitry and the old vine Aligoté, with the younger vine wines and Sauvignon aged in cement and stainless steel tanks.
