A blend of callet, manto negro and monastrell. All varieties ferment separately and Monastrell undergoes a carbonic semi-maceration. During the fermentation, very light steps are carried out with the hands and then it is transferred to used 500-litre barrels. The blend is made and rests 3 months in vats and 6 months in the bottle.
Sistema Vinari
We’re lucky enough to count Sistema Vinari’s Eloi Cedó Perelló amongst our very closest friends in wine. Originally from Catalunya, Eloi fell for Mallorca’s numerous indigenous varieties after making wine at the naturally-leaning, trailblazing Mallorquin estate 4 Kilos. Now making wines under his own steam as Sistema Vinari, we first became aware of his work after scoring a bottle of his now legendary red blend Chateau Paquita years ago, a wine that is as pure a distillation of Balearic sunshine, seaside and Eloi’s easygoing charm as it’s possible to imagine.
