Cyril buys this Macabeu from a friend of his in nearby Montner. As with everything he does there’s pristine lemony citrus fruit to the fore and, with the majority of the wine being raised in stainless steel (just 15% goes in to oak), there’s fresh, focussed acidity to add some spine too.

Cyril Fhal is one of the Roussillon’s, and perhaps France’s, great unheralded winemakers. A few years ago he decided to branch out from usual his monk-like focus on producing wines from his immaculately tended old vines high in the foothills of the Pyrenees and buy fruit from some trusted friends to create a range of more wines intended to be drunk more immediately, that sit happily at the centre of the dining table. Hors Champs is the name he has given to these notionally experimental, unquestionably delicious wines that retain the hallmarks of Cyril’s fastidious approach in the cellar.
