Les Béguines is a plot of vines inherited from Jérome’s mother and, given this wine’s current cult status, it’s almost impossible to believe that the fruit it produces was sold to a co-op for the first nine years of Jérome’s winemaking life. Now this blend of Pinots Meunier, Noir and Gris, are joined by a splash of Chardonnay in what’s a wonderfully fleshy, densely complex sparkling wine. 2 grams per litre dosage.
