The most vividly alive riff on Savagnin we can think of - this comes from a parcel of vines on the edge of the dense Jura forest where the soil is littered with marine fossils that lend the brightest of acidity to aromas of citrus and grassy herbs.
Etienne Thiebaud is the man behind the highly regarded Domaine des Cavarodes, who started out making his own natural wine in the village of Cramans, in the northern part of Jura back in 2007. Etienne is a true artisan using biodynamic farming practices determined by the lunar calendar and with his philosophy always being centred around making wine with as little intervention as possible.
