90% Pinot Meunier with just 10% of Pinot Noir from La Pucelle, a vineyard of clay, sand and limestone just outside the town of Chamery. This is raised in two sizes of used barrels, for two years, before being bottled in July 2016 and then disgorged in September 2019 - giving this 18 months under cork to give so much complexity and depth.

Thomas’s small estate (2.5ha), based in Chamery, has been passed along through the family for many generations who also farm cereals (hence the wheat sheaf represented on the label). In 2003, after an internship with a biodynamic winemaker in Burgundy, Thomas really understood the means to privilege a more natural approach into farming to let the expression of fruit speak. The domain is entirely certified organic since 2012.
