This is the Pugliese staple red grape Negroamaro which is given a short maceration to make an electric rosato that’s packed to the gills with energy and crunchy cranberry and pomegranate fruit.
Taking its name from the pure limestone soils of Valentina’s Passalacqua’s hometown of Arpicena, the Calcarius project has quickly set about redrawing the boundaries of Puglian wine. The kaleidoscopic assortment of wines she produces have become firm fixtures on our table to enjoy on the long days of summer.
