Logos d'Héraclite rosé is a dry sparkling wine made from 100% Pinot noir grapes. Pinot noir fruit are coming from "Les Paquis" vineyard, a 35-year-old plot laying on a loamy and chalky soil. This wine shows some great layers of complex aromas on the nose mainly some floral and spicy aromas on the nose, but more precisely faded roses. This is an extremely rich rosé style with an extreme fine bubble. The palate is really vinous, with great aromas of evolution such as licorice.
Grapes are handpicked at optimal maturity and then gently destemmed and macerated for 36 hours in stainless still tank for the maceration. The base wine is fermented and aged in still tank for 7 months before secondary fermentation in the bottle. The wine is aged on the bottle lees for a minimum of 10 years.
