East Sussex based Tillingham produce English wines with biodynamic processes using organic compost, free-roaming sheep to improve biodiversity around the plot and grapes sourced from neighbouring growers in Kent and Sussex. Pale gold and slightly hazy (undisgorged), the COL has very soft small bubbles. With an AVB percentage of 10.5 this makes for a perfect lunchtime sparkling. Aromas of toasty, creamy baked apples are contrasted by fresh acidity and a dry long finish.

Ben Walgate is the man behind Tillingham, the most ambitious wine project in the UK today. Based in the East Sussex countryside near Rye, they farm not only grapes but fruit and livestock too. It is early days, but their ambitious approach has to be commended and we’ve marked them as one to watch in the coming years.
